Corn on the Cob with za’atar, garlic and lemon

Ingredients
  • 4 cobs of corn
  • 4 cloves of garlic (1 per cob)
  • Salt
  • 2 tbsp za’atar
  • Zest of 1 lemon

Add a touch of middle eastern spice to a late summer classic, a great side for barbecues and burgers.

Method

  1. Preheat the oven to 160℃.
  2. In a pestle and mortar, grind the garlic into a paste with a large pinch of salt.
  3. Add the zest of a lemon to the garlic paste with a small splash of oil and mix.
  4. Rub the mixture on cobs and rap them in foil ready to bake.
  5. Roast on a baking tray in the preheated oven for 30 mins.
  6. Unwrap the cobs and scrape any paste from the foil and put onto the cobs before serving.
