Golden Beetroot Salad

  • 3 golden beetroot
  • 1 tsp apple cider vinegar
  • 1 preserved lemon
  • Mint leaves
  • 3 tbsp greek yoghurt
  • 1tbsp olive oil

Give sweet, earthy golden beetroot a touch of Middle Eastern flavour with this delicious salad. A great side for a barbecue, or to add a touch of summer to any dish calling for a side salad.

Method

  1. Slice the ends off of the beetroot and grate them using a food processor or box grater.
  2. Put the grated beetroot into a bowl and dress with 1 tsp of apple cider vinegar.
  3. Slice the preserved lemon as thin as possible and add to the bowl and mix thoroughly.
  4. Finely chop the mint leaves and add to the beetroot along with the Greek yoghurt and olive oil. Mix it all together and serve.
