Golden Beetroot Salad

- 3 golden beetroot
- 1 tsp apple cider vinegar
- 1 preserved lemon
- Mint leaves
- 3 tbsp greek yoghurt
- 1tbsp olive oil
Give sweet, earthy golden beetroot a touch of Middle Eastern flavour with this delicious salad. A great side for a barbecue, or to add a touch of summer to any dish calling for a side salad.
Method
- Slice the ends off of the beetroot and grate them using a food processor or box grater.
- Put the grated beetroot into a bowl and dress with 1 tsp of apple cider vinegar.
- Slice the preserved lemon as thin as possible and add to the bowl and mix thoroughly.
- Finely chop the mint leaves and add to the beetroot along with the Greek yoghurt and olive oil. Mix it all together and serve.
