Super simple vegetable soup

  • 1 large onion diced
  • 2 carrots diced
  • 3 cloves garlic, minced
  • 400g seasonal vegetables, chopped into 2cm cubes
  • 1.2l water
  • 5tsp bouillon powder (or follow packet instructions)

This is the recipe that powers the team at Kindling Farm and our volunteers at Kindling Market Garden through days of hard graft. This is ideal for using up any veg you have to hand and can be left to simmer while you get on with your morning’s jobs, safe in the knowledge that a filling and healthy lunch is there for you. The Kindling team swears by Unicorn Grocery’s bouillon powder, but any good organic bouillon should do it.

Method

  1. In a deep, heavy-based saucepan or casserole dish, heat the oil and knob of butter over a medium-low heat. Once the butter has melted, add in the diced onion and carrots and cook until starting to soften (around 5-10 mins). Then add in the garlic and cook for another 2 mins.
  2. Add in your chopped vegetables and cook for 5-10 mins, stirring occasionally, until they’re beginning to soften.
  3. Pour in the water and bring to the boil before stirring in the bouillon powder. Bring to the boil and leave to simmer gently for 15 minutes, or until all of the vegetables are fully cooked (this will vary depending on what veg you’ve used).
  4. Either serve as a chunky vegetable broth, or blend until at the desired consistency using a food processor (you may need to do this in batches) or a stick blender. Reheat to the desired temperature if required and serve with plenty of chunks of bread.
